Marinated Center-Cut Bone-In Pork Loin Chops with Khmer Style Pickled Veggies


Ingredients

  • 2 Meyer Natural Heritage Duroc Center-Cut Bone-In Pork Loin Chops
  • MARINADE:
  • 1/4 cup Dark soy
  • 1/4 cup Oyster sauce
  • 1/4 cup Hoisin sauce
  • Water to taste (2-4 teaspoons)
  • 1 tbsp Pepper
  • 2 MInced lemongrass (stalks)
  • 5 cloves Garlic (minced)
  • 1/2 tsp Cayenne powder
  • PICKLED VEGGIES:
  • 1/2 cup Sugar
  • 1/2 cup Rice vinegar
  • 1/2 cup Water
  • 5 cloves Garlic
  • 1 Shallots
  • 1 Daikon
  • 1 Carrot
  • 1 Persian cucumber
  • 4 Whole Thai chili

Preparation

Marinade:

1. Add marinade mixture in a bowl and mix. Place pork in the bowl, coat, and allow to sit covered in refrigerator for at least 45 minutes.

2. Place pork on grill and cook to 145°

Pickled vegetables:

3. Add sugar, vinegar, fish sauce and hot water in a bowl and mix until the sugar is dissolved.

4. Julienne daikon, carrot and cucumber

5. Thin slice shallot and garlic.

6. Add all the ingredients into the bowl and allow to sit for at least 2 hours in refrigerator. Mixture can be transferred to jar can will be good for up to 1 week refrigerated.
