Bacon Breakfast Skillet


  • 1 lb Meyer Heritage Duroc Pork Bacon (chopped)
  • 1/2 Onion (chopped)
  • 1 cup Sweet peppers (sliced)
  • 3 Yukon Gold potatoes (chopped)
  • 1 cup Cherry tomatoes (sliced)
  • 1 cup Spinach
  • Salta and pepper to taste


1. In a medium-sized skillet over low to medium heat, add bacon and let cook.

2. In a second large-sized skillet over medium heat, cook onion and peppers for about 5 minutes. Add potatoes and tomatoes and let cook for 10-15 minutes.

3. Stir in spinach, season with salt and pepper, add cooked bacon, and serve.
