Pork Fillet Schnitzel


Ingredients

  • 1 pkg Meyer Heritage Duroc Pork Loin Fillet (You may choose to thin the fillets by using a mallet to make pork about 1/3 inch thick.)
  • 2 tbsps Sour cream
  • 1/2 cup Panko breadcrumbs
  • Salt and pepper to taste
  • Vegetable oil (Enough to cover 1/3 inch of the skillet being used.)

Preparation

1. Pat dry pork fillets and season with salt and pepper on each side.

2. Brush each side of the fillets with sour cream to coat completely. This should be a thin layer and not lumpy.

3. Place panko breadcrumbs in a shallow bowl and coat filets entirely with panko

4. heat 1/3 inch of vegetable oil in a skillet on medium-high, oil will be hot enough when a pinch of panko into the oil sizzles.

5. Carefully place pork fillet in the oil and let cook on either side for about 5 minutes (if the outside browns too fast, reduce heat slightly.

6. Once pork is cooked place on a paper towel lined plater to drain any excess oil.

7. Serve with a vegetable and carb side of your choice. I like Asparagus and roasted potatoes.
