Calling all bacon lovers! This is the pork roast recipe for you. This juicy roast is wrapped in bacon, then gently cooked in a slow cooker so that it stays moist and tender. The bacon is crisped up under the broiler and tada! Dinner is ready.
This is one of the most juicy and flavorful pork loin roasts you will ever taste. The flavor of bacon is infused all throughout the meat. The bacon also helps seal in the juices of the pork leaving you with a mouthwatering dinner.
1. Season the pork loin roast generously with salt and pepper. In a small bowl, stir together the garlic, brown sugar, and mustard. Rub the brown sugar mixture all over the pork. On a cookie sheet, lay out the bacon so that the longer sides are slightly overlapping. Place the pork roast on top of the bacon and carefully wrap so that the bacon is overlapping on one side. Carefully place the roast in a slow cooker and cook on low for 4 hours.
2. Preheat the broiler.
3. Place the pork roast on a foil lined broiler pan and broil until the bacon is crispy, about 10 minutes. Allow to rest for 10 minutes, then slice and serve.
