Ranch Pork Chops


Ingredients

  • 1 lb Meyer Heritage Duroc Pork bone-in chops (4 bone-in pork chops)
  • Salt and pepper to taste
  • 1 tbsp Vegetable oil (divided)
  • 24 ozs Baby potatoes (cut in half)
  • 1 lb Fresh green beans (trimmed)
  • 1 pkg Ranch dressing mix
  • 2 tbsps Fresh parsley (chopped)

Preparation

If you're ready for an easy and quick dinner, then sheet pan dinners are right up your alley.  This one features juicy pork chops, baby potatoes, and roasted green beans that are seasoned with ranch flavoring.  This meal is done in a little over 30 minutes and has only a few dishes for cleanup.
 
This dish is also great for kids and a great way to get them to eat their veggies.  And since this recipe is a complete meal, no need to worry about sides.  It's all right here.  This is the perfect meal idea.

 

1. Preheat the oven to 475ºF.
 
2. Place the pork chops on a plate, the baby potatoes in a medium bowl, and the green beans in another medium bowl.  Drizzle each with 1 teaspoon of vegetable oil, season lightly with salt and pepper, then sprinkle 1/3 of the ranch seasoning on each.  Rub to distribute the oil and seasoning evenly.
 
3. Place the potatoes on a large cookie sheet and bake in the oven for 15 minutes.  Stir the potatoes, then add the green beans and pork chop to the pan.  Cook until the pork chop is no longer pink in the middle, about 15 minutes more.  Sprinkle with chopped fresh parsley and serve.
