Bacon Breakfast Tacos


  • 1 lb Meyer Heritage Duroc Pork Bacon
  • 1 cup Potatoes (diced)
  • 1 can Refried beans
  • 8 Flour tortillas (small)


1. In a large skillet, cook strips of bacon until crispy.

2. Meanwhile, warm a second large skillet over medium heat. Add about a tablespoon of oil and toss in diced potatoes. Cover skillet with lid and let cook for about 10 minutes. Remove lid, season with salt and pepper, and saute until crispy on the outside.

3. Warm refried beans in a small saucepan or in the microwave.

4. To serve, warm each tortilla and fill with a slice of bacon, crispy potatoes, and beans.
