Herb Breaded Pork Tenderloin


Ingredients

  • 1 lb Meyer Heritage Duroc Pork Tenderloin (trimmed)
  • 1 cup Flour
  • 2 Eggs (beaten)
  • 1 tsp Mustard
  • 1 cup Italian bread crumbs
  • 1/4 cup Fresh parsley (finely chopped)
  • 1 tbsp Vegetable oil
  • Salt and pepper to taste

Preparation

Here is a simple dinner idea you can throw together in no time flat.  We're talking crispy, juicy sliced breaded pork tenderloin.  You simply bread the pork in Italian breadcrumbs and bake!  Here is a tip for the breading.  Use one hand for dipping in the eggs and another hand for the flour and breadcrumbs.  This will prevent your hands from getting caked with breading themselves!
 
Another great part about this recipe is that it utilizes easy ingredients that you may already have in your kitchen already.  All you have to do is pick up the tenderloin and you're good to go!

 

1. Preheat the oven to 400ºF.
 
2. Season the tenderloin with salt and pepper.  Place the flour in a casserole dish and season with salt and pepper.  In another casserole dish, beat together the eggs and mustard.  Set a few pinches of parsley aside for garnish, then combine the rest with the Italian breadcrumbs in another casserole dish.
 
3. Dip the tenderloin into the flour, followed by the egg, and finally in the breadcrumbs.  If desired, dip back into the egg and then into the breadcrumbs one final time.  This makes for an extra crispy breading.
 
4. Spread the oil on a cookie sheet and place the tenderloin on top.  Bake in the oven until the pork is no longer pink in the middle, about 20 minutes.  Allow the tenderloin to rest for 5 minutes, then slice and serve.
