Pork Tenderloin & Potato Sandwich


Ingredients

  • 7 ozs Meyer Heritage Duroc Pork Tenderloin
  • 1 Large potato (cut into 4 thicker slices)
  • 1 tsp Dried oregano
  • 1 tbsp Olive oil
  • 1 tsp Cjun seasoning
  • Vegetable oil
  • 2 tbsps Ketchup
  • 1 Lettuce leaf (halved)
  • 1 Medium tomato (sliced into 4)
  • 1 Fresh chili (sliced)
  • 1 Small radish (sliced)
  • 1 oz Pickle slices
  • Salt and pepper to taste

Preparation

1. Place the potato slices into a baking dish and season them with salt, pepper, and dried oregano. Drizzle with olive oil and bake for 25 minutes at 360°F/180°C.

2. Place the pork tenderloin on the work surface. Cut it lengthwise in half. Season both sides with salt, pepper and Cajun seasoning. Rub in.

3. Heat 1/3 cup of vegetable oil in a skillet over medium heat. Place the seasoned tenderloin halves into the skillet. Fry them for 4 – 6 minutes each side.

4. Add 1 tablespoon ketchup on a potato slice. Place 1 lettuce leaf half, add 1 tenderloin piece, 2 tomato slices, 3 – 4 chili slices, 2 – 3 radish slices, and 1/2 an ounce of pickles. Top with another potato slice. Do the same for the remaining ingredients.
