Chili-Cocoa Pork Ribs


Ingredients

  • 4 lbs Meyer Heritage Duroc Pork Loin Back Ribs
  • 1/4 cup Chili powder
  • 1/4 cup Cocoa powder
  • 1/4 cup Brown sugar
  • 1/2 tsp Garlic powder
  • 1 pinch Cumin
  • 1/4 tsp Cayenne
  • 1 tsp Onion powder
  • 1 tbsp Vegetable oil
  • 2 tbsps Fresh cilantro (chopped)
  • Salt and pepper to taste

Preparation

Ready for a unique rib experience?  These rich ribs are coated in a mixture of cocoa powder, chili powder, brown sugar, and other spices for an awesome flavor combination.  The earthiness of the cocoa and chili powder goes great with the meaty flavor of the ribs.
 
These are dry rubbed ribs, so all you need to do is rub them up with spices, pop them in the oven, then kick back and relax.  And don't let the dry rub fool you.  These slow cooked ribs are moist and delicious.  They go great with creamy polenta or some mashed potatoes.  They're ribs like you've never tasted them before.

 

1. Preheat the oven to 300ºF.
 
2. In a medium bowl, combine the chili powder, cocoa powder, brown sugar, garlic powder, cumin, cayenne, and onion powder. 
 
3. Rub the ribs with vegetable oil, season with salt and pepper, then rub with the chili powder mixture.  Place on a foil-lined cookie sheet and bake until tender, about 2 ½ hours.
 
4. Allow the ribs to rest for 5 minutes, then cut and sprinkle with cilantro.
