Skillet Pork Tenderloin Marsala


Ingredients

  • 1 lb Meyer Heritage Duroc Pork Tenderloin (trimmed)
  • 1/2 tsp Vegetable oil
  • 2 tbsps Butter
  • 5 ozs Cremini mushrooms (sliced)
  • 1/4 cup Shallot (chopped)
  • 1 clove Garlic (minced)
  • 1 1/2 tbsps Flour
  • 1/2 cup Marsala wine
  • 1 cup Chicken broth
  • 2 tsps Fresh thyme (chopped)
  • 2 tbsps Heavy cream
  • 1 tbsp Fresh parsley (chopped)
  • Salt and pepper to taste

Preparation

Here is a dish that is comfort food to a T.  It features succulent slices of pork tenderloin smothered in a rich and slightly sweet mushroom gravy.  This recipe is perfect after a long hard day because it is satisfying, comforting, and best of all-- easy to make.
 
You only need one skillet to throw this dish together and it can be done in only 40 minutes.  This recipe is so delicious it will be hard not to go back for seconds.  And don't worry about serving this recipe to kids.  Even though it contains wine, all alcohol evaporates during cooking.  Serve it up with some creamy mashed potatoes for an awesome meal that will please the whole family.

 

1. Preheat oven to 400ºF.
 
2. Place a large, ovenproof skillet over medium-high heat.  Generously season the pork tenderloin with salt and pepper.  Add the oil followed by the tenderloin and sear on all sides until well browned, about 5 minutes per side.  Transfer the tenderloin in the skillet into the oven until cooked through, about 15 minutes.
 
3. Transfer the tenderloin to a cutting board to rest.  Place the skillet back over a medium heat and add the butter, stirring until melted.   Add the mushrooms and shallots and cook until tender.  Add the garlic and cook for 1 minute more. 
 
4. Sprinkle the mushrooms with the flour, then stir and cook for 2 minute more.  Slowly pour in the wine, stirring as you go, followed by the chicken broth.  Bring to a boil, then reduce to a simmer, until the sauce thickens.  Add the thyme and cream and cook for 5 minutes more.
 
5. Slice the tenderloin and serve with the sauce.  Sprinkle with fresh parsley and enjoy!
