Balsamic Pork Loin Roast with Caramelized Carrots


  • 3 lbs Meyer Heritage Duroc Pork loin roast (pork loin roast, trimmed)
  • 1 tbsp Vegetable oil
  • 4 cups Baby carrots
  • 1 Medium onion (1/2 inch thick slices)
  • 1 Fresh thyme (small sprig)
  • 1/4 cup Balsamic vinegar
  • 2 tbsps Honey
  • 2 cloves Garlic (minced)
  • Salt and pepper to taste


1. Preheat oven to 400ºF.
2. Place a large skillet over medium-high heat.  Generously season the pork loin roast with salt and pepper.  Add the vegetable oil to the pan followed by the pork.  Sear well on all sides, about 7 minutes per side.
3. Add the carrots, onions, and thyme to the pan, stir to coat in oil, then transfer to the oven.  In a small bowl, whisk together the balsamic vinegar, honey, and garlic. 
4. Brush the pork every 10 minutes with the balsamic mixture and bake until no longer pink in the middle, about 50 minutes.  Allow the pork to rest for 10 minutes, then slice and serve with the carrots.
